The right size for your rhythm
A pantry bag for the meals ahead.
A 1 lb bag gives you room for a larger batch without committing to a food-service sack. Measure what your recipe needs, press excess air from the bag and close the seal between uses.
Put it to work
Make the seasoning your own.
Work the flakes into your kimchi seasoning mixture, or stir them into a sauce before it coats pork, tofu or vegetables. Follow the recipe for timing and quantity; a dry sprinkle behaves differently from flakes that have had time to soften.
Keep the pepper sealed in a cool, dry place away from light. Follow the storage directions and date printed on the pack. Use clean, dry utensils and avoid steam reaching the open container.

Which grind should I choose for kimchi?
Coarse gochugaru is the usual choice for kimchi and vegetable side dishes. Fine powder is useful when a recipe calls for a smoother seasoning mixture, including gochujang and some soups.
Does grind tell me the heat level?
No. Coarse and fine describe the texture. They are not reliable heat ratings. Start with the amount in a trusted recipe and adjust to your taste.
What should I check on the package?
Check the ingredient statement, origin, storage directions and any allergen or certification information on the pack you receive. Culinary style and growing origin are different things.
